How to enjoy the winning meal Yamanishi Pavilion.
昨日、学生時代のサークル仲間と、東新宿にある山西亭に行ってきた。ここは、ネットで予約できるし店内Wifiも完備されているので過ごしやすいガチ中華店だ。
Yesterday, I went to Yamanishitei in Higashi-Shinjuku with my college club friends. It’s a legit Chinese restaurant that’s easy to enjoy because you can make reservations online and it has free Wi-Fi inside.

ガチ中華というと、日本語が通用しない、匂いや味付けが日本人好みとかけ離れているイメージが強く、身構えたり敬遠する人も少なくないが、ここは山西省の麺料理を日本人向けにアレンジしているので安心。昨日も10数品頼んだが、ここで美味しい注文方法を発見した。
麺の太さで有名なビャンビャン麺は、予約がないと食べられない。また、豆腐のクミン揚げもできるまでかなり時間がかかる。この2品は同店マストアイテムなので、お店を予約した際に注文を入れておく。
Many people are intimidated by the idea of Chinese food because of the lack of Japanese language skills and the smells and flavours that are so far removed from Japanese tastes, but this is a place where Shanxi noodle dishes are adapted for the Japanese. Yesterday, I ordered more than ten dishes, and here I discovered a delicious way to order.
The biang biang noodles, famous for their thickness, can only be had with a reservation. The fried tofu with cumin also takes a long time to be made. These two items are the restaurant’s must-haves, so place your order when you book a table at the restaurant.


利用する当日、先に予約した料理を食べ終えたら、凉面か凉皮を頼んでおこう。見た目がこんにゃく風なので小麦を使わず豆や澱粉をこねた凉皮。弾力があり食べやすいが、注目は赤くて酸っぱ辛いタレ。これ、揚げ物料理によく合うので、皿の上の具材がなくなってもてスタッフが皿を下げないようにお願いし、茄子のクミン(孜然)揚げに浸けて食べるとあら不思議。辛いタレと茄子表面の油っこさ、茄子の水分が見事にマッチし、たちまちお酒のアテになる。自分はアルコールはそこまで飲まないが、友人たちは「うめえうめえ」と飲んでいた。
この4品だけで1時間以上楽しめます。いろいろな中国戻りの日本人を連れていきたいです。
On the day of use, after finishing the dishes reserved earlier, ask for 凉面 or 凉皮. 凉皮, which looks like konnyaku, is made from beans and starch, not wheat. It is resilient and easy to eat, but it is the red, sour and spicy sauce that attracts attention. It goes well with deep-fried dishes, so the staff asked me not to take the plate down when the ingredients on it ran out, and I dipped it into the deep-fried aubergine cumin (孜然) and ate it. The spicy sauce, the oily surface of the aubergine and the moisture of the aubergine all go together beautifully and the dish quickly becomes an accompaniment to alcohol. I don’t drink that much alcohol myself, but my friends were drinking it, saying ‘ume-ume-ume’.
You can enjoy these four dishes alone for more than an hour. I would like to take various Japanese people returning to China with me.
